Lemon Dill Salmon

Jack's PhotoFolks, here’s another recipe I think you’re going to love!

Lemon Dill Salmon
Makes 4 Servings

Ingredients
4 8oz Fillets of Salmon
2 Lemons
½  Bunch Fresh Chopped Dill (or 3 tablespoons of dried dill)
1 ½ Cup White Wine
Salt & Pepper

Instructions
Pre-heat oven to 350°
Place Salmon Fillets in an oven-safe baking dish, pouring white wine in the bottom of the dish and salt & pepper top of salmon liberally. Sprinkle chopped dill over the salmon & white wine. Cut one lemon in half, and squeeze juice into the baking pan; slice the other lemon in thin slices, and place two slices on top of each salmon fillet, placing any additional lemon slices in the bottom of the baking pan.

Place salmon in the oven; bake for 20 minutes or until fish flakes with a fork. Remove the lemon slices from the fillets, and serve!

Goes great with some garlic mashed potatoes and grilled asparagus!

We scouted high and low on the Web to find recipes that are not only easy and simple to make but also are delicious!

For appetizers we recommend you start with the Marinated Grilled Shrimp recipe we found on AllRecipes.com. The recipe description says it makes shrimp so yummy you don’t even need cocktail sauce, we can agree!

For our main dish, you can try the Lobster Wrap one of our favorite easy-to-make recipes found on the Food Channel. Or if you want to go all out and impress friends and family order our signature Clambakes-to-go. All you have to do is pick it up at our store!

Jack's PhotoThe next time you think that great seafood is served only at fancy restaurants, think again! Sometimes all it takes is a quick drive to C&C and picking up some of the freshest seafood around. This week, as I will try to do every week, I would like you to check out a fabulous seafood recipe called “Drunken Scallops.” It’s a quick and easy recipe that is sure to impress, and leave your dinner guests raving for weeks! 

So here we go and don’t forget the garlic butter, Enjoy!

“Drunken” Scallops
Makes 4 Servings

Ingredients
1 ½ lbs. Sea Scallops
1 Pint C&C Seafood Stuffing or Seasoned Breadcrumbs
4 tablespoons Garlic Butter (Recipe Below)
¾ Cup Thinly Sliced Scallions
1 Cup Vermouth
Salt & Pepper 

Instructions:
Pre-heat oven to 350°
Place scallops in an oven-safe baking dish, pour vermouth in with scallops, salt & pepper liberally, and cover surface of scallops with seafood stuffing. 

Place scallops in oven, bake for 20 minutes or until scallops are tender. Place thin slices of garlic butter over top of breadcrumb, and bake for 1-2 minutes. Remove from oven, sprinkle sliced scallions over entire dish, and enjoy!

 Garlic Butter
Soften 4 tablespoons of butter, add 2 teaspoons of minced garlic, and a dash of pepper. Fold ingredients together, and place in refrigerator to re-harden.

Going to the Chapel…

CaseyAh the weather is warm, the sun is actually shinning and that could mean just one thing: Wedding season! Being a recent bride myself, I have to admit I love all things wedding. The cake, the flowers, the dress! What is not to love?

However, there is always a down side to everything and with weddings, the costs add up quicker than you can say ‘I do.’

Keeping the wedding budget under control is difficult. Saving money and making it seem like you didn’t spare a penny is a tricky, stressful thing to do. My answer for that is: Give them lobster! Clambakes are great for weddings.

They are great for weddings because your guests can enjoy a tradition New England clambake for less than $36/person. Any of you brides out there know that a meal for that price, which includes lobster, is pretty much non-existent in the wedding world.

Don’t forget about that rehearsal dinner, which is a great time to spend with close friends and family without all the pressures of the wedding day. Clambakes are also great for this special event.

At my rehearsal dinner our out-of-town guests loved getting a piece of a New England tradition. Plus, nothing brings a family together than showing out of towners the right way to eat a lobster.
